Big and bold flavors on this coffee from Silanjia Farm in Yunnan, China. There’s a pleasant round funk among flavors of concentrated fig juice, dried orange, and grape juice, with a background of oolong tea here. It reminds me of a lambic beer, or some other experimental sour. Super nice.
Silanjia triple ferments this coffee. The cherries undergo 3 stages of anaerobic fermentation for 6 days in total before being dried. Because of the multitudes of fermentation, there are also a huge variety of microbes involved, producing that complex lambic-like flavor profile.
