





El Injerto Washed Yellow Nance

Beautiful and balanced this one. This coffee appeals to both light roast lovers and dark roast lovers. A true all-rounder, this blend of fully washed yellow cherries (caturra and catuai) brings a burnt caramel flavor first and foremost, which then spreads across the tongue and chameleons into apricot and papaya, with the aroma and texture of darjeeling teas. If you are a medium roast lover, or just an appreciator of well balanced cups, this one is definitely for you.

“El Injerto Uno Farm is located in La Libertad village, deep in the valley of Huehuetenango Department in northwestern Guatemala, and is cultivated on a vast site of 750 hectares. The area has a cool average temperature of 16-28°C , moderate humidity with an annual rainfall of 1,800-2,000 mm , and volcanic soil rich in organic matter . The distinct dry season allows the flowers to bloom and ripen evenly, producing coffee with a subtle wine-like aroma.
During the harvest season, only the most ripe cherries are hand-picked and processed using the traditional washing process. After the pulp is removed, the cherries are soaked in fermentation tanks for 60-72 hours and washed with abundant spring water from the mountains. The resulting parchment, which is rich in sweetness, is carefully dried on the patio (a place where it is dried in the sun).
El Injerto Uno Farm has its own dry mill (sorting factory), and all processes are carried out under integrated management.
The coffee from El Injerto Uno Farm wins top prizes every year at the Guatemala Specialty Coffee Competition. Yellow Nance is a lot made up of two varieties, Yellow Caturra and Yellow Catuai (both of which have yellow berries).”
