Cafe Granja La Esperanza Potosi Washed Pink Bourbon
Josh’s notes:
Romantic and brunchy! Tastes like what all the flowery food influencers and food photographers are trying to convey with bright pink flower brunches with nice teas laid across the table. Mom would love this coffee. The word "fresh" comes to mind, as in fresh roses, with a great tart bite like pomegranate or hibiscus. Springy and happy making.
Cafe Granja La Esperanza’s Notes:
Every cherry is hand-picked at its peak ripeness, ensuring only the best make it to your cup. Through a meticulous floating process, we gently separate the densest from the rest, guaranteeing superior quality. Next, we measure their natural sweetness with precision, setting the stage for fermentation magic. For 72 hours, these cherries are lovingly fermented in open tanks, unlocking the vibrant, complex notes that will define your coffee experience.
Our cherries are dried to perfection using advanced mechanical dryers, ensuring consistent flavor development over 8 to 12 days at a controlled 38°C. Once dried, the beans rest in climate-controlled storage, cocooned at an ideal 18– 19°C to preserve their unique character until it’s time to shine.
Roast:
Roasted light and spectacularly by our friends at Hatou Coffee and Roasters in Jeju, South Korea, rested for 7 days, then vacuum packed and frozen for long term storage.
