Josh’s Notes:
Of this month’s releases, this somewhat anonymous smallholder bag of Yirgacheffe took me most by surprise. Serious Jasmine flavor profile, almost exactly like Ito-en Jasmine tea. It’s in the smell, it’s in the flavor, it’s everywhere with this coffee. As it cools, it moves a bit towards a light green tea, and you also get a subtle lime acidity that gives some much welcome dimension. Extremely crushable, and sure to be a huge crowd pleaser. I will probably use this coffee to impress you at a pop-up. :)

Glitch’s Notes:
This lot employs a distinctive “Jasmine Washed” process, inspired by the traditional Chinese scenting technique used for jasmine tea. In this method, natural jasmine blossoms are layered with the green coffee beans, allowing their fragrance to infuse into the beans over multiple cycles.

The summer and autumn jasmine flowers used in this lot were sourced from Leshan, China. The summer flowers impart a bright and vibrant aroma, while the autumn flowers add a deeper, more calming scent.

Even before roasting, a gentle fragrance emanates from the beans. As first crack begins, the jasmine blossoms from within, enveloping the space in a soothing, aromatic bouquet. When sipped, it creates the illusion of drinking jasmine tea.

Through this tea-inspired processing technique, the naturally fruity character of Ethiopian coffee harmonizes beautifully with the delicate and sweet floral notes of jasmine, resulting in an exceptional cup. Please enjoy this truly special experience.”

Roasted light and spectacularly by our friends at Glitch Coffee and Roasters in Tokyo, Japan, rested for 7 days, then vacuum packed and frozen. I recommend enjoying this coffee right away.
