Josh’s notes:
Nice co-fermented coffee that’s not overdone. Amazing ground smell, incredibly peachy! Almost trolli peach ring-like, but stops just short of artificial candy aromas. This coffee has more of a fresh, picked off the branch peach flavor. You can almost taste that slightly under-ripe peach in this which is incredible.
Thoughtful’s notes:
“Cherries are harvested, floated to remove defects, then oxidized for 24 hours before dry pulping.
The pulped coffee is placed in sealed containers with peach juice and yeast, where it ferments for 72 hours.
After fermentation, the coffee is packed into GrainPro bags and stabilized for 20 days.
One of the few coffees that actually tastes like the fruit. It’s not too artificial, and has some green bitterness in the finish to resemble as if it were picked from the tree.”
Roast:
Roasted light and spectacularly by our friends at thoughtfulcoffee in Brooklyn, New York, rested for 7 days, then vacuum packed and frozen. I recommend enjoying this coffee right away.
