Josh’s Notes:
Smells of sweet bell peppers on grind, and big zesty pile of lemon zest off the grater. Super bright and vibrant first impression. On wet, that pepper fades away to more lemon zest. In the brew, you get a round, complex medley of figs and a very clear hazelnut spice. This coffee hits every part of the coffee flavor wheel to me. Very multidimensional flavor profile that can be enjoyed across the whole temperature spectrum. I never got bored sipping this one!
Glitch’s Notes:
“Located in the Popayán region of Colombia, Santuario Farm stretches across hilly terrain at elevations of 1,850 to 2,100 meters, with a view of the Plake Volcano. The area is characterized by mountainous landscapes, offering ideal conditions for coffee cultivation including sunlight, rainfall, altitude, and soil.
From its inception, Santuario Farm has aimed to produce the ultimate "Colombian Mild" specialty coffee. Every stage, from planting seedlings to harvesting and processing, adheres to high quality standards.
The 260-hectare farm is a haven for rich forests and diverse wildlife, where only organic fertilizers are used. The high altitude eliminates pest issues, negating the need for pesticides, and the farm actively contributes to the local community.
Enjoy a cup characterized by its light, citrusy fruitiness and refreshing herbal aromas.”
Roasted light and spectacularly by our friends at Glitch Coffee and Roasters in Tokyo, Japan, rested for 7 days, then vacuum packed and frozen. I recommend enjoying this coffee right away.
