








Rosma Rosmarago Washed Pacamara/Maragogype

Lovely and balanced from Lilo as always. This coffee is part of their special “Kissa” line of coffees. Rosma Rosmarago Washed is a blend of 85% Pacamara and 15% Maragogype, so you get a balanced and refined cup of pacamara combined with a bit of intrigue from the maragogype! This coffee is an incredible drinker with a tangerine acidity and subtle amaretto sweetness. An excellent option to pair with milk. In the aftertaste, I get a bit of lingering dulce de leche!

“Rosma Farm has been lovingly cultivated by the Morales family for generations. Originally purchased by Alejandro Morales in 1963, his son Fredy took over in 1980 and began farming coffee alongside his career as a dentist. Working with local producers, he helped build roads to the farm, improving access and quality of life for the community. Today, the farm is managed by his sons as well.
The Morales family is committed to sustainability—preserving native shade trees, using clean mountain spring water for processing, and offering support such as housing and healthcare for workers. Through the Xinabajul Project, they work with neighboring small producers to improve quality and raise the global reputation of Huehuetenango.
Cherries are picked at sunrise and meticulously sorted for ripeness. They go through density sorting, gentle depulping, pH-monitored fermentation (12–36 hours), and slow drying on African beds for 12 days. The result is a clean, vibrant cup with depth and clarity.
Rosmarago is a special plot within Rosma Farm where Pacamara (85%) and Maragogype (15%) trees are cultivated. This rare lot offers a distinctive, layered flavor profile that reflects both the terroir and careful cultivation.”
