Josh’s Notes:
Clean and classic Ethiopia. Light jasmine and Nesquik notes in the nose, and honey-d lemon water qualities in the cup. There is an evolving, complex flavor profile as it cools, with grape notes appearing amongst the lemon notes. Glitch kills it with these classic washed Ethiopias.
Glitch’s Notes:
“The producer is Nigusse Gemeda, the inaugural winner of the Ethiopia Cup of Excellence 2020. His company, Karamo Coffee, is located in Karamo Agena in the Bura region of Sidama, and continues to produce high-quality coffee by taking advantage of the cool environment at an altitude of 2,200 to 2,400 meters.
For Karamo Coffee, which has previously only worked with the Natural process, this lot marks their first attempt at the Washed process. Fermentation takes place in a low-temperature environment for 48 hours, and the water is replaced with fresh cold water every 24 hours during fermentation, ensuring a gentle and uniform process.
This wine offers refreshing fruit flavors reminiscent of grapes and red apples, along with a well-balanced and pleasant finish. It fully showcases the potential of the Sidama highlands.
Please experience this lot, which embodies Mr. Nigusse's new challenge.”
Roasted light and spectacularly by our friends at Glitch Coffee and Roasters in Tokyo, Japan, rested for 7 days, then vacuum packed and frozen. I recommend enjoying this coffee right away.
