Josh’s notes:
Smells extraordinarily good on bag open. White florals and jasmine notes abound, along with an edge of not-quite-lemon. Citron? I also get an amazing aromatic, woody herb smell like rosemary or thyme, baking in the sun. On grind, whiffs of yuzu come up that are nice and zingy. On wet, this suddenly morphs into a white, buttery gardenia presentation. In the cup a wonderfully balanced and interesting, thyme cooking in butter flavor. Think Gordon Ramsay teaching you to make a steak, but no steak. Above all this, a white peach flavor soars over bringing it all together. It strikes me as a poached peach, but the slightest citrus edge keeps it from being too rich. Incredible washed Ethiopia. A reminder of how good coffee can be when not fucked with too much.

Roasted light and spectacularly by our friends at Hatou Coffee and Roasters in Jeju, South Korea, rested for 7 days, then vacuum packed and frozen. I recommend enjoying this coffee right away.
