Josh’s notes:
Perfume rose and chamomile tea aroma on bag open. On grind, a note of citrusy bergamot comes forth. On wet, the bergamot and florals grow strong as fuck and fill the room. Lovely smell to have around. In the brew, the florals continue, with a nice edge of lemon and honey as you sip and enjoy. Absolutely beautiful coffee. Hard to put into words. Highly recommended. Hatou is home to some of the best roasters on the planet.
Hatou’s notes:
“Finca La Betania has been family-owned and operated for over 80 years in Palestina, Huila, Colombia, at an elevation of approximately 1,800 meters above sea level.
The farm was originally established by Linarco’s grandparents, Teresa and Lino, who cultivated corn and beans on the land. The next generation transformed it into a coffee farm by introducing Typica, Bourbon, and Caturra varieties. Today, Linarco Rodriguez leads the farm and has driven its remarkable transformation.
Following the coffee market crisis in 2014, he shifted the farm’s focus toward specialty coffee production, introducing premium varieties such as Pink Bourbon, Geisha, and SL28. Through continuous research and innovation, he has developed advanced fermentation techniques that produce distinctive and exceptional cup profiles.
This coffee was grown at Finca La Betania and processed at the LA FEIKA BEANS Washing Station.”
Roast:
Roasted light and spectacularly by our friends at Hatou Coffee and Roasters in Jeju, South Korea, rested for 7 days, then vacuum packed and frozen. I recommend enjoying this coffee right away.
