La Lia "Pie San" Yellow Honey Yellow Typica

Josh’s notes:
Amazing smell of canned, Dole pineapple on bag open. It’s the very first thing that jumps out at you. On grind, that tinned pineapple is accompanied by a sweet, orange fleshed peach with some light purple florals along the edge. On wet, the smell of peach and lavender begin to really gain traction, and start to co-mingle in the kitchen. You’re husband will ask what you are doing but you’re too busy thinking about this smell. In the cup, a watered down pineapple juicy acid flavor, like juice in a glass of melting ice. It is incredibly delicious and clean. This quickly morphs into a wave of purple florality, then a blanket of soft peach tea lingers after you sip. This is a wonderfully balanced coffee that hits all the notes we look for in specialty coffee.

Please note, the roaster strongly recommends allowing this coffee to rest for additional time. We were able to pull these notes on coffee rested only 2 weeks, but we also feel additional resting (30ish extra days at room temperature) will take these beans to even greater heights. They just have that quality.

From Micro-Lot to Thriving Harvest
Originally cultivated specifically for a Costa Rican Brewers Cup Champion, this lot began as an exceedingly rare micro-lot. Even back in 2021, the entire harvest amounted to just a single 23kg carton. Today, we are overjoyed to report that these cherished trees have truly thrived, flourishing to produce an abundant harvest of over 100kg for the 2025 season!

A Geisha-Like Evolution
This year’s harvest beautifully reflects the prosperity and health of these trees in its flavor and acidity. Unlike previous years, this coffee has evolved to drink with the stunning elegance of a high-grown Geisha. It showcases incredibly vibrant florals and a profoundly rich acidity—a true testament, we believe, that this Yellow Typica has deeply rooted itself and harmonized with the land.

The Cup Profile
In the cup, expect a mouthwatering opening of juicy pineapple, seamlessly transitioning into vibrant, elegant lavender florals. The experience gracefully culminates in a beautifully sweet and lingering peach finish.”

Roast:
Roasted light and spectacularly by our friends at Apollon’s Gold in Tokyo, Japan, rested for 14 days, then vacuum packed and frozen. I recommend letting this coffee rest an additional 30(ish) days at room temperature after you receive it.
