Kotowa Estate "Duncan" Natural ETH47

Josh’s notes:
Even with minimal resting, this coffee already smells of lavender, grapefruit expression, and all sorts of melons. I can only imagine how this coffee will taste and smell with a little more time to rest. It is an incredibly vibrant aroma already! On grind, more of that tangy red grapefruit. On wet, extra heavy bubble action on bloom. Almost like a shaken can of soda. Anyway, the bubbles coming off bloom smell of purple lavender buds which only grows stronger as the brew goes on. It also takes on a white flower quality like plumeria or gardenia. Something white and buttery. Exceptionally clean in the brew. Almost a mountain water quality in the mouth. Crispy. As it cools, a distinct note of wet green honeydew comes forth along with a medley of other fruit I can’t put my finger on. Perhaps melons of other colors. I suppose I’d call it complex!

I can see this one selling quickly. ETH47 is an amazing varietal. Grab a bag while you can!

Please note, the roaster strongly recommends allowing this coffee to rest for additional time. We were able to pull these notes on coffee rested only 2 weeks, but we also feel additional resting (30ish extra days at room temperature) will take these beans to even greater heights. They just have that quality.

Cultivated in the Renowned "Duncan" Plot This exquisite ETH47 was grown in the "Duncan" plot of the legendary Kotowa estate, meticulously managed by producer Ricardo Koyner. Known for its cool climate and unique micro-terroir, the Duncan plot slowly matures the coffee cherries, resulting in intense sweetness, complex acidity, and a truly elegant structure that perfectly highlights the unique characteristics of the ETH47 variety.

Roaster & Brewer's Notes These beans are exceptionally dense and hard, a true testament to their slow, high-altitude maturation. Through our final roast profile, the inherent flavors of the ETH47 cultivar are beautifully and accurately represented. The cup opens with a distinctive grapefruit body and vibrant lavender florals, perfectly rounded out by the deep, refreshing sweetness of honeydew. The flavor structure is so pronounced and expressive that even when brewed at a lighter ratio of 13.2g to 255ml, the cup remains incredibly vibrant and complex. Roast:
Roasted light and spectacularly by our friends at Apollon’s Gold in Tokyo, Japan, rested for 14 days, then vacuum packed and frozen. I recommend letting this coffee rest an additional 30(ish) days at room temperature after you receive it.
