El Diviso Thermal Shock Pink Bourbon

Josh’s Notes:
Fruity tropical smells on bag open and grind. Crazy tropical fruit in the brew. Nice bright lime acidity, combined with a peach soda, and a light passion fruit tartness! This is possibly the 7th or 8th iteration of this coffee I've tasted across multiple roasters, and might be my favorite yet. Pink bourbons like this are a modern classic.

“EI Diviso is a family-owned coffee plantation that has been around for more than 30 years.

In addition to the traditional cultivation methods in Colombia, we have introduced advanced processing methods such as new fermentation and drying technologies, and continue to refine the process. Due to being used in the World Barista Championship in 2022, he spread his name to the world.

Floral aromas, high-quality acidity, and rich sweetness express complex flavors.”

Roasted somewhere between light/medium and spectacularly by our friends at Raw Sugar Roast in Tokyo, Japan, rested for 7 days, then vacuum packed and frozen.
