Josh’s notes:
Smells like opening a Japanese peach soda on bag open, the gas that escapes the bottle when you twist the cap. The kind of peach soda with pulp in it. It’s the smell of fresh peaches rather than artificial, candy-like ones- specifically the canned variety. On grind, a breezy tropical vibe escapes the beans and opens you up to even more peach aroma. On wet, more of the same tropical fruits wafting up with again, more peach! In the cup, the flavor of canned peaches, or the juice from the can…but you know, coffee. :) Takes an ultra-juicy quality as it cools, and if you let it play on the tongue, a sparkling clean sensation. Delicious co-ferment done right.
Hatou’s notes:
“A bite bare door impression as soft and sweet as a peach. It passes through the scent of soft osmanthus and apricots and ends with the fresh nuances of tropical fruits.”
Roast:
Roasted light and spectacularly by our friends at Hatou Coffee and Roasters in Jeju, South Korea, rested for 7 days, then vacuum packed and frozen. I recommend enjoying this coffee right away.
