Grape wine and plum wine-like flavors, with an umeshu’s lush and smooth texture. This coffee is also very balanced and avoids extremes in either direction. Very cool Chinese coffee roasted with care by Brian! A great complement to the classic Yuan Yi Yuan.

“This microlot from Autumn Amber Estate is a low-temperature natural process. Only fully ripe red cherries were carefully selected and fermented indoors for 18 days under controlled low temperatures to maintain clarity and aromatic precision. After fermentation, the cherries were gently dried in a mechanical dryer for approximately two weeks until reaching stable moisture content.

This was our favorite of around 16 Chinese coffees we received last year. What intrigued me about this was how it expressed balance while still primarily focusing on terroir.

Usually with Chinese coffees, you get very strong funk, or really heavy wood and earth tones. This coffee seems to tame both edges, resulting in something very drinkable.

Roast:
Roasted light and spectacularly by our friends at thoughtfulcoffee in Brooklyn, New York, rested for 7 days, then vacuum packed and frozen. I recommend enjoying this coffee right away.
